GSX cafe project

Hi everyone new to the site. I am embarking on the cafinisation!! of a 1980 GSX 750 E. I was really looking for a CB honda like lots of other ppl but here in Australia they are just too damn expensive!! Picked up a pretty tidy GSX with a good engine for cheap and now I get to start throwing money at it. Any hints/suggestions on sourcing parts like tanks/seats etc would be appreciated. I want to convert the bike to wire wheels and would think that GS wheels would fit as Suzuki are good at using common parts across the model range but am not sure. Anyone got an idea of compatability?
